   Solids calculation is a critical step in candy formula development. It involves determining the proportion of solid ingredients (such as sugars, stabilizers, and other dry components) in the final product. Accurate solids calculation ensures the desired texture, consistency, and quality of the candy. By balancing the solids content, confectioners can control factors like sweetness, texture, and shelf stability, leading to a perfect candy formulation every time.

Calculate
Total solids represent the percentage of ingredients in a candy that do not evaporate during cooking. In hard candy, this typically includes sugars and other non-volatile ingredients like corn syrup, flavors, and colors. Here's how to calculate it step by step using a Hard Candy example:

1. Assuming the next formulation
2. Identify Solid of Each Ingredient
Look at each ingredient in the formula and determine the solid content, this can be found in the supplier specification of the ingredient either by "Total solids" or "Water content" or "Moisure content". If you find water or moisture content only substract that value to 100%.
3. Multiply Ingredient Weights by Their Solids Percentage
Convert each ingredient's weight into its solid contribution:
Granulated Sugar: 70% × 100% = 70% solids

4. Add Up All the Solids Contributions
Total solids = 70% (sugar) + 24% (corn syrup) + 0% (water) = 94% total solids
